Food Borne Illness

Food borne illnesses are defined as diseases, usually infectious or toxic in nature, caused by bacteria (or their toxins) or other pathogens such as parasites or viruses that enter the body by the ingestion of contaminated foods. Everyone is at risk of contracting a food borne illness. There are hundreds of known diseases that are transmitted through food. The symptoms of food borne illnesses can range considerably from mild gastroenteritis to life threatening neurological (ie. Botulism from Clostridium botulinum), hepatic (ie. Hepatitis A), and renal complications (ie. E.coli O157:H7).

Health Canada and the Public Health Agency of Canada have estimated that between 11 and 13 million Canadians suffer from illnesses due to food borne bacteria every year. Controlling the problem can be very difficult because some bacteria can survive food processing, or contamination may occur during food preparation, cooking or storage. By implementing proper food safety practices or programs, chances of food borne illnesses could be reduced.
